Some R&D on fluid mixing.
I made a script to set one fluid's temperature to 1 and the other to 0. by averaging the temperature of each particle with some of its neighbors, this creates smoothly mixing colors. The script also transfers the temperature to the particle UVs so when it is meshed, it can be shaded with a ramp shader. In this case, blue to green to yellow. As the temperature averages out, the green at the middle (.5) of the UVs comes out.
You could do the same thing with custom attributes, but I like using temperature so you can see it in the view port.
