Any particles emitted from Circle, Square etc. are standard Particles/ SPH (stands for Smoothed Particle Hydrodynamics), anything created using a HY_Domian are FLIP (Fluid Implicit Particle). With the SPH (STandard particles) this should work. With Hybrido2/ FLIP in its current implementation, RBD will be slightly advected by the underlying fluid motion field, but they cannot really float like in reality. Two Mesh nodes, bound to the same emitter. Setting up Splash Core filtering in a way that one mesh clips away the core and the other one the splash. The rest is in the manual.

Use a really small Poly Size. You could also try it with two meshes, one for the core fluid and one for the droplets. To achive this, play with the Core/ Splash filters of the mesh.

Your question is far to general. To me, this doesn't look like an emitter, but some kind of splash that is happening. What is the point in a juice simulation that you need help in? Create an emitter, some geometry to emit onto (never emit directly into camera space, as this will look poorly. Always ...

By changing global scale, you are changing the pressure inside your liquid a lot and of course nothing will work as before, anymore.

In the latest patch from Monday, the Surface Distance will also accept negative values so you can work against these issues.
