I think the place to start is use the default settings for the water. For the oil, cut the Density in half and give it a high Surface Tension value. The density will make the oil float and the surface tension will make the drops collection into groups.

I've posted a question on their forum, and even sent them a message directly to their sales email, but so far nothing. Maybe they are just tired of dealing with people like us who only paid a small amount but have a zillion questionds.
Does not look like they are selling the Learning Edition any more.
